Streaming, YouTube, Chaturbate, and OnlyFans are based on scamming tactics, getting money out of viewers that feel they need to subscribe and donate. I'm pretty sure you can classify it as gambling if you look at the neuroscience around it.

It's not strange at all. Just because you studied something and have a degree doesn't mean any subjectively "good" job is going to pay well. There's a fuck ton of jobs out there that expect a college degree that pay shit. You could be a secretary, an HR rep, or a glorified support associate. There's many jobs that pay better than your average twitch worker. Also, most of the partnered/affiliated Twitch streamers probably aren't making as much as you think. I saw the list of 10,000 streamer payouts. It's across two years and about 8,000/10,000; make over six figures across again two years (maybe less if they started streamlining in the last year). People fork out more and more cash to streamers because they like them, with no concerns that 10.000 others are doing the same, it's a pyramid scheme with subscriptions and donations that increase by word of mouth but the product stays the same. This is not about what "most earn", this is about what the big-timers earn. There should be cap limits for the massive earners through the system so people can't take millions of dollars from the users, then Twitch should get taxed by their earnings.

Yeah that problem basically has nothing to do with this. Are there people out there who are avoiding a traditional job in the hopes of hitting the lottery and becoming a YouTube star or twitch streamer? Yes of course there are, but the main reason why many restaurants and other retail outlets are hurting for jobs is that in the last year or so people have just gotten sick and tired of trying to work backbreaking thankless jobs for either minimum wage or just barely above the minimum wage meanwhile the companies that they are working for are raking in profits by the billions. And while that is happening the cost of living is rising basically everywhere especially when it comes to rent prices. Add that on to the absolutely insane rates of student loans and the fact that most college degrees are essentially worthless these days and you just have a big old fuck you situation on all sides.No wonder nobody wants a job these days
