The one here in the OP image bottom right is South Coast Plaza. I'm headed there in a couple of hours since I'm only ten minutes west of it.

What's the point of installing demo units if those are the games they're going to showcase?

There is one in queens it seems. I aint going that far though just to try it. They said to wait and they will add more.

Apparently there are DriveClub Demos in the wild too. But from the pics it seems they are standalone and not mixed into the regular demo stations.

Yes, FIFA looks great. I can confidently say it is running at full 1080p. With the other demos I'm not so sure (Octodad and Contrast definitely look sub-1080).
