Civ V's tutorial is the best way to get the Greek-specific achievement.
So midnight release means I can play on Thursday night doesn't it?

Most features from Civ 5 (including expansions) are already in the game, including e.g. Spies and Religion. Off the top of my head, I cannot think of anything important missing.

The only thing missing is the World Congress, but it's cause they took out diplomatic victory. It should come back in the future.

Yep, it will be returning, just not for vanilla. They werent happy with the diplomatic victory in Civ 5 and want to improve upon it but wont have it ready for Friday, so it will come back later on. I kind of agree, diplomatic victory was my least favorite way to win in Civ 5 and I rarely went after it, so I wont be missing it much honestly. Looking forward to seeing how they make it better though.

I'd prefer to have as many non-aggressive victory conditions as possible as I'm not so much into hostile land-grab gameplay style.

It makes sense as a business model though. Expansions are pretty much dead as a concept now outside of a very few, specialist places - they cost too much compared to dlc, require vast amounts of work, and they divide your player base. You are far better off providing the basic game and experience in one package, and then hoovering up money via optional DLC. New civs, alternate leaders, alternate graphics sets - that's how the market works now.
Civ 5 did have a demo - you got to play Egypt on a fixed map for 50 turns i think or something? Definitely sold me on the game when it was released.

My most recent game, a random neutral or positive city state near me was all, "HELP ME LORD PROTECTOR, slay the evil barbarian in my territory".I really hope the first Expansion is heavily diplomacy focused. I'm pretty sure previews have painted the new diplomacy features as being better than V, but still not that great.
So having an Expansion completely focused on adding depth and value to those systems and a victory with it would be great. The AI just is all too often intractable and creating relationships, trading luxuries, sharing techs and even swapping cities is always so pointless if not impossible.
The amount of times I've become BFFs with another country for centuries only to have them never want to do anything for me is pretty much every time. Same with countries I've gone to war with, whom I've beaten the ever living crap out of and yet they refuse to surrender without me giving up major concessions and always refuse to give up a city or large sum of gold, it's nuts.
Bring back Vassals, bring back stealing cities via culture, make other Civs actually evaluate the situation and realize that I've killed like 5 invasions forces and am not about to lose this war any time soon so suing for peace and asking me to give up 2 cities and pay 15 gold a turn forever isn't going to happen.

So I moved into the territory, killed the barbarian, and instantly (or the next turn) was informed that they were all angry I happened to be in their territory. Well, what did you expect.

Is cultural border taking back from Civ 4? I missed being able to do culture blast to steal some of my neighbors bordering tiles.
