Thor is certainly not a nimble fighter like McGregor, he's the Norse embodiment of strength and known for his feats of might.
I would love to see McGregor try this:

Also, I highly doubt Vikings had any notion of being "ripped". The concept of low bodyfat is a recent one and the result of modern day nutrition plus supplements.
Early bodybuilders for example looked like this (yes this was considered very muscular):
It took until the mid 60s or early 70s until more ripped bodybuilders would even appear.
A Viking from the past would eat to get strong and would certainly not have the luxury to pass on calories. Our modern day notion of strength and athleticism differs very much from the past.
I highly doubt the Vikings would have imagined a "ripped" Thor.
