There's a lot of games that the PS1 has that you say it's cool, but Zelda, Banjo, Mario Kart, fucking Turok... Get N or get out.
I legitimately think anyone answering anything other than PS1 is an edgelord here (Or didn't own one and is fighting the good console warrior fight 20 years later).

Saturn and 64 had some phenomenal games. Some in particular are absolutely some of the most important or special games for people who played them when growing up. People who could finally play Sega Rally at home, people who liked 2D fighters (XMen vs Street Fighter + Saturn RAM cart), people who opened Ocarina of Time on christmas morning, people who made cardboard screen dividers to stop cheating fucks from looking at the other player's screen in Goldeneye.
Yes, PS1 has loads of awesome games but the saturn and n64 are easy to justify.
It's irrelevant how large a library is if it only provides an inferior experience in the genres one's interested in.Nobody said they don't have good games. Great games even. But the sheer volume of great games isn't comparable no matter the genre.
The people you mention who are clinging to their memory of being 8 and getting OoT are exactly what I'm talking about.
Imagine if the PS2 gen had 90% of cross-platform titles only on the PS2, that's what the PS1 gen was like.

MOST of the games for all three of these systems haven't 'aged well' by most standards, but the PS1 was an embarassment of riches for gaming. Multiplat was barely even a thing that gen, so it is probably something like an 85-10-5 split in terms of percentages of good games back then, PS1-N64-Saturn.
That's because PSone era 3D games look like shit nowThe Saturn edges PS1 out for me. Had both (and an N64), and I still have the Saturn. As beautiful as those RPGs were on PS1, nothing compared to strange otherworldliness and battle system of Panzer Dragoon Saga. And PD Zwei was amazing. Then we have arcade-perfect SFA2, SFA3, X-Men vs SF, Radiant Silvergun, the Cotton games, better Neo Geo ports, Hyper Duel, Batsugun, Battle Garegga, Guardian Heroes (amazing game), Marvel vs Street Fighter, Dungeons & Dragons, Assault Suit Leynos, Keio Yugekitai, and the list goes on.
Admittedly I loved 2D sprite-based games more than the alternative.
