Apologies if I've missed it, but what are the technical aspects of Poképelego? One feature I loved about Super Training is that it would cap off at 252 in one stat automatically so you would not end up wasting 3 EVs. Also, are there any ways to track or visibly see EVs similar to the Super Training graph/using a reset bag then reset the game without saving? Can you set caps or limits to fine tune? Poképelego will be right up my alley as long as there are ways to control it to get what you want (no matter the time it takes)... but if it's a generic stick 'em in there and it just raises, I may as well stick to the old method of battles.
